HEJ! FROM FANØ OYSTER KING
Hej, I am Jesper Danneberg Voss, also known as the Fanø Oyster King, – born in Copenhagen and raised in Luxembourg. After graduating in Sport Studies I worked in human resources for 15 years in Luxembourg. At some point however I realized that I didn’t want to spend my whole life behind a desk, so back I went to Denmark.
To be more precise: I moved to the wonderful island of Fanø in the Wadden sea. I traded in my suit for shorts, flip flops and rubber boots and it was on Fanø where I found my love – the oysters. The result of this love story can be found in this book, where I hope, I have been able to present a new perspective on the oyster. Have fun cooking.
